Apple and Blueberry Pie- By Executive Chef Charlo Pulis

Serves 2

Ingredients

  • 1 egg, beaten
  • Vanilla ice-cream
  • For the pastry (makes 300g):
  • 200g plain flour
  • ¼ tsp salt
  • 2 tbsp icing sugar
  • 100g unsalted butter, cubed
  • 1 egg, beaten
  • 1tsp lemon juice
  • 2tbsp iced water
  • For the filling:
  • 180g apples
  • 30g castor sugar
  • ¼ of a lemon zest and juice
  • 50g blueberries
  • 10g butter

Method

  • Start with the pastry – mix the flour, salt and icing sugar together. Add half the cubed butter to the flour and rub it in.
  • Add the rest of the butter and mix until the pastry is crumbly. In a separate bowl, mix the egg with the lemon juice and water, and add gradually to the dry ingredients until it forms a dough.
  • You may not need all the liquid. Shape the pastry into a ball, wrap in cling film and refrigerate for at least 30 minutes.
  • For the filling, start by peeling, quartering and slicing the apples. Place in a bowl with the sugar, lemon juice and zest, and set aside.
  • Heat a pan, add the butter and once it melts add the apple mix and leave to cook for three to four minutes.
  • Then add the blueberries, allow to cook for a few minutes until they release colour into the mixture and set aside to cool.
  • To assemble, line the baking moulds with the pastry, fill them with the apple mix, cover with pastry again, glaze with the beaten egg and cook in the oven at around 200C.
  • After 10 minutes, check the pastry to see if it cooked through. Remove from the oven and leave them to rest.
  • You may serve with vanilla ice-cream.

Linguine with Fresh Tuna- By Executive Chef Charlo Pulis

Serves 2

Ingredients

  • 200g linguine
  • 2 cloves garlic, finely chopped
  • Herb oil
  • 30ml white wine
  • 75g tuna belly, cut in cubes
  • 30g cherry tomatoes
  • 30g chickpeas
  • Lemon juice and lemon zest
  • Chili, according to your liking
  • Salt and pepper

Method

  • Fill up a pot with water together with a pinch of salt and place on the fire to boil the pasta.
  • Meanwhile, sauté the garlic in some herb oil in a pan, add the tuna with the lemon zest and juice and
  • a hint of chili, together with the chickpeas, cherry tomatoes and white wine.
  • Season with salt and pepper. Allow to cook for three minutes, add the cooked pasta and mix.
  • Toss everything in the pan and serve.
  • Garnish with rucola.

MEMO -Online Customer Care Office

Kindly note that as from today the 5th August 2016, only customer support staff and employees who are required to access the customer care office to perform work duties (Slots personnel due to power panel and IT personnel) are allowed in the online customer support office. Furthermore, all rest breaks shall not be taken within the same office.

All employees are to note that the customer support office is a non-smoking room at all times and smoking is only permitted in the staff canteen or the designated smoking areas.

Anyone who is found to be in breach of this policy shall be subjected to disciplinary measures.

Dear All

We are pleased to announce the following appointments with effect from today the 1st of  August 2016;

  • Audrey Vella to the position of Chief Financial Officer of Tumas Gaming Ltd., Best Play Ltd.  and Glimmer Ltd.

Audrey joined Tumas Gaming in 2010, bringing with her extensive experience in the area of Finance and Audit.  Over the past 6 years, she occupied the post of  Finance  Manager for Tumas Gaming, during which she  has  built a solid & efficient  finance team for Tumas Gaming Ltd. We strongly believe that with her education and experience she will now do a splendid  job  as CFO  of our Company.

  • Ramon Ceci to the position of  Finance  Manager for Tumas Gaming Ltd., Best play  Ltd. and Glimmer Ltd.

Ramon also joined us in 2010 in position of  Finance Manager for Glimmer Ltd.  Prior to joining Glimmer Ltd., Ramon held various positions in the  field of Accountancy and Finance.  Over the years, Ramon contributed  by introducing and  improving department processes for Glimmer Ltd. He will now take  over the Finance sections of all three companies.  We are sure that he will do an excellent job and continue to solidify the work of his predecessor.
